This jig comprises a preparation cell, a flattening plunger, aerationplunger and probe. The flattening plunger is used to flatten the doughsample and the spiked plunger aerates the sample before testing. Theprepared sample is then tested with a 6 mm (0.24 in) diameterflat-ended probe.
